Crunchy Top Cupcakes

A classic chocolate cupcake topped with a crispy chocolatey top; it really is a chocolate delight waiting to be baked.

Method

  1. Preheat the oven to 180C/ gas mark 4.
  2. In a large mixing bowl pop the butter and sugar in, then, just a little bit at a time, beat in the eggs until the mixture is smooth - add a little flour if it starts to curdle.
  3. Fold in the flour, cocoa powder and baking powder, until everything is mixed thoroughly.
  4. Pop a heaped spoonful of the mixture in each cupcake case and bake for 20 - 25mins until golden brown and just firm. Set aside to cool.
  5. Mix together the icing sugar, butter and cocoa powder, then fold in the coco pops and pipe on top of the now cooled cupcakes.
  6. To finish, decorate with your choice of topping.
